Cranberry Orange Oatmeal Spice Muffins
- 1 cup Whole Wheat Flour
- 1 cup Oatmeal
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Ground Cloves
- 1/2 teaspoons Ground Nutmeg
- 1/2 teaspoons Salt
- 2 teaspoons Baking Powder
- 2/3 cups Skim Milk
- 1/2 cups Splenda
- 1 Large Egg, Beaten
- 1/2 cups No-sugar-added Applesauce
- 1/2 cups Dried Cranberries
- 1 Medium Orange, Zested
- Preheat oven to 350u0b0F. Spray a muffin tin with nonstick cooking spray and set aside.
- In a large mixing bowl, combine flour, oatmeal, spices, salt, and baking powder.
- In a medium mixing bowl, combine milk, Splenda, egg, and applesauce. Add dry ingredients to wet ingredients and stir just until moistened. Gently stir in cranberries and orange zest.
- Pour batter into muffin tins, about 2/3 full. Bake 10-12 minutes.
- Each muffin has about 125 calories, 1.5 grams of fat, and 3 grams of fiber.
