Plum Crumble
- 8 whole Black Plums, Stoned And Cut Into 8 Small Wedges
- 4 Tablespoons Brown Sugar
- 1/4 cups Apple Cider
- 2 Tablespoons Honey
- 1 teaspoon Fresh Ginger, Peeled And Finely Chopped
- 2/3 cups Flour
- 1/2 sticks Frozen Unsalted Butter
- 1/4 cups Brown Sugar
- 1/8 cups Oats
- 3 Tablespoons Finely Chopped Pistachios
- 1. Preheat oven to 375F degrees. Lightly grease 4 mugs.
- 2. Using a large saucepan over medium heat, add in the plums, brown sugar, cider and honey. Simmer for 5 minutes until the sugar dissolves and the plum softens slightly. Add in the ginger and stir to combine.
- 3. Divide the mixture between four small mugs or ovenproof dishes.
- 4. In a food processor, add in the flour and butter and pulse until it resembles coarse breadcrumbs. Pour into a mixing bowl and add the sugar, oats and pistachios. Mix to combine.
- 5. Spread the crumble topping evenly over the plum mixture and place on a baking sheet on the centre oven rack.
- 6. Bake for 20-25 minutes or until the topping is golden and the juices start to bubble. Let rest for a few minutes and serve.
