Lowcountry Boil
- 4 quarts Water
- 1 bottle (12 Fl. Oz. Bottle) Beer
- 1/4 cups Old Bay Seasoning
- 1 whole Onion, Peeled And Halved
- 1 whole Lemon, Halved
- 2 whole Bay Leaves
- 4 whole Large Russet Or Red Potatoes, Quartered (or 16 Whole, Small Potatoes)
- 1 whole Polska Kielbasa (may Substitue Turkey Polska Kielbasa For A Lower Fat Version), Cut Into One Inch Pieces
- 4 ears Fresh Or Frozen Corn On The Cob, Shucked And Halved
- 2 pounds Raw Shrimp With Peel And Tail On
- In a large stockpot, bring the water, beer, Old Bay Seasoning, onion, lemon, and bay leaves to a boil. Add potatoes and cook for 10 minutes. Add the Kielbasa and corn and cook for an additional 10 minutes. Add the shrimp and cook until the shrimp turn pink and start to float to the top (approximately two minutes).
- Remove from heat, drain, and pour out onto a large platter, or, for a large crowd (double, triple, etc. the recipe), pour out onto a newspaper-covered table and dig in! Serve with drawn butter and cocktail sauce. This recipe serves 6-8.
