Citrus Salad With Caramelized Slivered Almonds
- FOR THE SALAD:
- 3 Tablespoons Sugar
- 1/4 cups Slivered Almonds
- 1 head Head Lettuce (or Bag Of Mesclun)
- 1/2 cups Fresh Spinach Leaves (optional)
- 1 cup Chopped Celery
- 1 Tablespoon Minced Parsley (optional)
- 2 whole Oranges Or Clementines (peeled And Segmented)
- 1/2 cups Sliced Red Onion (or 2-4 Sliced Green Onions)

- FOR THE DRESSING:
- 1/2 cups Salad Oil (I Use Extra Virgin Olive Oil)
- 2 Tablespoons Sugar
- 2 Tablespoons Vinegar (I Use Apple Cider)
- 1/2 teaspoons Salt
- Pepper
- Caramelized almonds:
- Put sugar and almonds in a pan over low heat and stir until sugar begins to collect on the almonds. Cook until golden brown. Let cool and break up before adding to salad.
- Mix all salad ingredients on individual plates or in a large bowl. Mix all dressing ingredients in shaker jar until blended. Pour over or toss into the salad. Top with the almonds. Serve!
