Green Goddess Dressing
- 1 cup Italian Flat Leaf Parsley, Or Basil
- 2 Tablespoons Basil, Chopped
- 2 Tablespoons Mint, Chopped
- 2 Tablespoons Dill Chopped
- 3 cloves Garlic, Minced
- 1 cup Mayonnaise
- 1 cup Plain Greek Yogurt (or Sour Cream)
- 1/4 cups Lemon Juice (2 Lemons)
- 1 whole Anchovy
- 2 teaspoons Kosher Salt
- 1 teaspoon Pepper
- 1 teaspoon Red Wine Vinegar
- 2 Tablespoons Olive Oil, If Needed
- Mince the parsley, basil, mint, dill, and garlic. In a blender, add mayo, yogurt, then the remaining ingredients and liquids. Begin to blend. Continue blending about a minute and a half. Add olive oil if necessary to thin the dressing to your liking.
- Try it on salad, pasta salad, as a sandwich topping, on a baked potato, on your cereal (just kidding)-the options are endless!
