Oatmeal Peanut Butter Cookies – Healthy & Guilt-Free

  1. Preheat oven to 350u0b0F. Line two baking sheets with parchment paper.
  2. In a bowl, cream together peanut butter and brown sugar.
  3. Add the egg whites, applesauce and vanilla. Beat together until smooth and creamy. Add flour, baking soda, salt and cinnamon and beat together until incorporated.
  4. Stir in oats and fold in chocolate chips.
  5. Place about 1 tablespoon of cookie batter onto the cookie sheet. Bake for 10-12 minutes, until bottom is lightly brown.
  6. Makes 32 cookies.
