Green Bean And Walnut Salad

  1. Steam green beans in a steamer basket over a pot of boiling water, just for four or five minutes, until crisp tender. Drain well, and pat the beans dry with paper towels. Place them in a bowl with the sliced radicchio.
  2. In a small bowl, whisk together the ingredients for the dressing - lemon juice, garlic, olive oil, salt and pepper, and dress the green beans and radicchio.
  3. Before serving, top the salad with the walnuts and Feta cheese.
  4. Fantastic! Serves about 6.
