Green Bean And Walnut Salad
- FOR THE SALAD:
- 1 pound Fresh Green Beans, Ends Trimmed
- 1 cup Sliced Radicchio
- 1/2 cups Toasted Walnuts, Chopped
- 4 ounces, weight Feta Cheese, Crumbled
- FOR THE DRESSING:
- 1 Tablespoon Fresh Lemon Juice
- 1 clove Garlic, Finely Minced
- 2 Tablespoons Olive Oil
- 1/4 teaspoons Kosher Salt
- 1/8 teaspoons Freshly Ground Black Pepper
- Steam green beans in a steamer basket over a pot of boiling water, just for four or five minutes, until crisp tender. Drain well, and pat the beans dry with paper towels. Place them in a bowl with the sliced radicchio.
- In a small bowl, whisk together the ingredients for the dressing - lemon juice, garlic, olive oil, salt and pepper, and dress the green beans and radicchio.
- Before serving, top the salad with the walnuts and Feta cheese.
- Fantastic! Serves about 6.
