Fruit Crumb Cobbler
- 2 cups Cherries, Pit Removed And Diced
- 1/4 cups Dried Cranberries
- 4 Peaches, Pitted And Diced
- 2 Tablespoons Lemon Juice
- 1 cup Sugar
- 2 cups Rolled Oats
- 2 Tablespoons Raisins
- 2 Tablespoons All-purpose Flour
- 2 Tablespoons Sugar
- 1/4 pounds Unsalted Butter, Cut
- 1 teaspoon Vietnamese Cinnamon
- Combine the first five ingredients in a skillet over medium low heat. Simmer 20 minutes or until fruit is soft.
- Meanwhile, in a bowl, combine the next six ingredients and set the bowl to the side.
- Once fruit is soft, place in a greased, oven proof dish (9x13 or similar size).
- Top the fruit with the rolled oat mixture, spreading evenly and place into a pre-heated 425 degree F oven for 20 minutes.
- Serve alone or top with a dollop of whipped cream or ice cream!
