Oatmeal Raisin Nut Cookies
- 1 cup Lard, At Room Temperature
- 1 cup White Granulated Sugar
- 1 whole Eggs, Large And Room-Temperature
- 1 cup All-purpose Flour
- 2 cups Old Fashioned Rolled Oats
- 1 teaspoon Ground Cinnamon
- 3/4 teaspoons Baking Soda
- 1 pinch Salt
- 1 cup Chopped Nuts
- 1 cup Raisins
- 1/2 cups Whole Milk, Room Temperature
- Heat oven to 300u0b0F. Cream together lard and sugar until light and fluffy. Add eggs, one at a time, beating each until well incorporated. Whisk together flour, oats, cinnamon, soda, and salt in a separate bowl. Stir dry ingredients into wet in three batches. Add the nuts and raisins with the milk and mix just until combined.
- Drop onto a greased or non-stick pan and bake for 10-20 minutes or until golden brown. Cool on a wire rack.
