Oatmeal Raisin Pancakes

  1. 1. In a large bowl, combine dry ingredients (oats, flour, baking powder, baking soda, salt, cinnamon, and brown sugar) and mix well.
  2. 2. Slowly stir in buttermilk. Add beaten egg, applesauce, and vanilla. Mix well. Cover and refrigerate overnight. (If you are making this the morning of, let the mixture sit at least 10 minutes before proceeding.)
  3. 3. When ready to cook pancakes, heat up a large griddle or pan. While the griddle is heating up, mix in the raisins to your pancake batter.
  4. 4. Grease your hot griddle with Pam or butter. Using a 1/4 cup measuring cup, pour batter onto griddle. Cook 3-4 minutes, or until bubbly and the edges are turning golden. Flip and cook an additional 3-4 minutes.
  5. 5. Serve with hot maple syrup! Enjoy!
