Oatmeal Coconut Pecan Cookies
- 2 sticks Unsalted Butter, Softened
- 3/4 cups Brown Sugar, Packed
- 1/3 cups Granulated Sugar
- 2 whole Eggs
- 1 Tablespoon Vanilla Extract
- 1-1/4 cup All-purpose Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoons Salt
- 2-1/2 cups Uncooked Oats
- 1 cup Pecans, Finely Chopped
- 1 cup Sweetened Coconut Flakes
- 1 Tablespoon Unsalted Butter, Softened For Greasing The Pans
- Preheat oven to 350u0b0 F.
- Mix together butter, brown sugar, granulated sugar, eggs and vanilla in a large bowl until well combined, but do not over-mix.
- In another bowl, combine flour, baking soda, cinnamon and salt. Mix flour mixture into butter mixture. Mix in oats, pecans and coconut.
- Grease baking sheet with 1 tablespoon butter. Roll dough into balls, approximately 11/2 inches in diameter. Place dough balls onto baking sheet leaving about 2 inches between them.
- Bake for approximately 12 minutes until cookies are light golden brown.
- Recipe yields 3 dozen cookies.
