Squid Sauce(Salsa Di Calamiri)

  1. In medium saucepan,
  2. saute
  3. sliced
  4. onion
  5. in olive oil until just tender.
  6. Add
  7. cleaned
  8. and washed squid (see directions) to onions and
  9. saute
  10. until
  11. squid turns red and curls, about 5 minutes.
  12. Remove
  13. squid
  14. from
  15. pan and set aside.
  16. Add tomato puree and water to saucepan.
  17. Stir and heat over medium high heat. Add rest
  18. of ingredients and bring to boil.
  19. Lower heat to a medium simmer.
  20. Stir sauce occasionally and let cook for 35 to 40 minutes.
  21. Taste for salt and adjust if necessary. Add squid and cook
  22. an additional 20 minutes.
  23. Serve over thin spaghetti or linguine.
  24. Makes 4 to 6 servings.
