Orange Chop Salad
- FOR THE TOPPING:
- 1/2 cups Sliced Almonds
- 3 Tablespoons Sugar

- FOR THE SALAD:
- 6 cups Romaine Lettuce, Chopped
- 3 stalks Celery, Chopped
- 3 whole Green Onions, Chopped
- 1 can (11 Oz. Can) Mandarin Oranges, Drained

- FOR THE DRESSING:
- 1/2 cups Oil
- 1/4 cups Vinegar
- 2 Tablespoons Sugar
- 1/2 teaspoons Ground Mustard
- 1/2 teaspoons Salt
- 1/4 teaspoons Garlic Powder
- Topping:
- In a small pan, cook and stir almonds and sugar over medium heat until almonds are caramelized (they will be light brown and coated with melted sugar), approximately 4-6 minutes. Spread the almonds on foil or waxed paper. After they cool, break apart.
- Salad:
- Combine romaine, celery, onions, and mandarin oranges in a salad bowl. Top with caramelized almonds.
- Dressing:
- Combine dressing ingredients in a jar or container with a lid and shake well. Pour the dressing over the salad and toss.
