Chopped Greek Salad Stuffed Avocados With Tzatziki Sauce
- FOR THE SALAD:
- 1/2 Cucumber, Deseeded And Diced
- 1 Yellow Pepper, Diced
- 1/2 pints Cherry Tomatoes, Quartered
- 1 Red Onion, Chopped
- 1/3 cups Kalamata Olives
- 3 ounces, weight Feta Cheese, Cubed
- 1/4 cups Fresh Oregano
- 1 Lemon, Juice Only
- 3 Tablespoons Olive Oil
- Salt And Black Pepper To Taste
- 2 Avocados, Halved, Pitted And Lightly Scooped
- FOR THE TZATZIKI SAUCE:
- 1/2 cups Plain Greek Yogurt
- 1/2 Cucumber, Deseeded And Finely Chopped
- 1 clove Garlic, Minced
- Salt And Black Pepper To Taste
- Combine all salad ingredients (except for avocados) in a large bowl. Toss well.
- Stir together all ingredients for the tzatziki sauce.
- Fill avocado halves with the salad and top with the sauce. Serve immediately.
