Mini Butterscotch Apples

  1. Chop up the candies (I used peanuts) you would like to use and put them in separate bowls. Wash and dry the apples. Mix cold water with lemon juice.
  2. Use the melon ball tool to slice about 12 round balls from each apple. Once you cut a few balls, put them in the water lemon juice solution for 10 seconds and put on paper towels to dry. This will keep the apples from browning.
  3. Melt the butterscotch chips in the microwave until melted, in 30-second intervals. (I used butterscotch instead of caramel because the caramel won't stick.)
  4. Insert a toothpick into the top of the green skin of the apple and dip into melted butterscotch and then press into the candy.
  5. Place on wax or parchment paper to dry. These set up very quickly.
  6. Store in the refrigerator.
