Lime Cookies With Cream Cheese Frosting
- FOR THE COOKIES:
- 2-1/4 cups All-purpose Flour
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 3/4 cups Granulated Sugar
- 2 Tablespoons Zest Of Lime
- 2 sticks Unsalted Butter, Room Temperature
- 1 whole Egg
- 1 teaspoon Vanilla
- FOR THE FROSTING:
- 4 ounces, weight Cream Cheese, Softened
- 1 cup Powdered Sugar
- 2 Tablespoons Lime Juice
- Preheat the oven to 350u0b0F and line two baking sheets with parchment paper or silicone baking mats. Set aside. Note: If you do not have parchment paper or a silicone baking mat, place the dough directly on an ungreased cookie sheet.
- In a medium bowl, combine flour, baking powder and salt. Set aside.
- In a small bowl, combine granulated sugar and lime zest. Rub the sugar and zest together with your hands to combine.
- Beat butter and sugar/zest mixture together until light and fluffy. Beat in egg and vanilla until well combined.
- Slowly beat in the flour mixture on low speed until blended. Dough will be thick.
- Drop dough by rounded tablespoons onto baking sheets, spacing 2 inches apart. Gently flatten dough with the palm of your hand.
- Bake for 11-13 minutes or until cookies are just set. Cool cookies on baking sheet for 2-3 minutes before transferring to wire racks. Cool completely.
- To make the frosting, add the cream cheese and powdered sugar to a medium bowl and beat until smooth. Add the lime juice and combine well.
- When cookies are cool, use a knife to ice. Let icing dry before packaging. You will want to share!
