Homemade Pancakes With Fresh Peach Syrup
- FOR THE PEACH SYRUP:
- 2 cups Fresh Peaches
- 1/2 cups Raw Sugar
- FOR THE PANCAKES:
- 1-1/2 cup Flour
- 3 teaspoons Baking Soda
- 1 teaspoon Salt
- 1 teaspoon Vanilla Extract
- 1 whole Egg
- 1/8 cups Raw Sugar
- 1 cup Milk, Or More As Needed
- Butter, To Serve
- For the syrup:
- First, cut up the peaches into chunks. Place the peach slices into a bowl and add half of the raw sugar. Place in the fridge for about 30 minutes. Then, add the peaches to a sauce pan. Cook the peaches with a the remaining sugar to make a syrup with the peaches. Begin by cooking the peaches over medium heat then reduce the heat to a simmer once the sugar is melted. Allow the the peaches to simmer while cooking the pancakes.
- For the pancakes:
- Mix flour, baking soda, table salt, vanilla extract, egg, and raw sugar. Begin to blend the ingredients together. Then slowly add milk until the dry ingredients blend together a form a thick batter. This should require 1 cup to 1 1/4 cup of milk. Do not add all the milk at once. If you end up adding too much milk, the batter will be too thin and soup-like. If this does happen, add a little bit of flour to fix your mistake. Make sure you mix the ingredients with a fork or whisk until the mixture is fully blended and all the lumps of flour are gone.
- Once the batter is done, heat up a pan. Add a ladle of pancake mixture to the hot pan. Flip once the batter starts to bubble on the first side all over, then flip. You should cook each side for about 3 to 4 minutes.
- When the pancakes are done, add butter to each warm pancake for flavor. Serve the warm pancakes with the warm peach syrup.
