Banana And Mars Bar Loaf Cake
- 4 ounces, weight Butter
- 5-2/3 ounces, weight Brown Sugar
- 2 whole Eggs
- 2 whole Medium Bananas, Mashed
- 7-7/8 ounces, weight Plain Flour
- 2 teaspoons Baking Powder
- 4 Tablespoons Greek Yoghurt
- 1 teaspoon Vanilla Extract
- 3 whole Mars Bars (60g Each)
- Preheat the oven to 160u0b0C. Grease and line a 2lb/900g loaf tin.
- In a large bowl, cream together the butter and sugar until fluffy. Beat in the eggs one at a time, then stir in the mashed bananas. Sift in the flour and baking powder and stir until combined. Stir in the Greek yoghurt and vanilla extract and then fold in the Mars bar pieces.
- Bake in the oven for 40 minutes and then cover with foil to stop it getting too brown. Bake for another 40 minutes (so total cooking time is about 1 hour 20 minutes). Allow to cool in the tin for a few minutes before turning out onto a wire rack.
