My Favorite Breakfast Ever

  1. Sprinkle the top half of the muffin with cheese and and toast in a toaster oven until cheese is melted and bubbly.
  2. Heat a small skillet over medium-high and add the prosciutto. Cook until it starts to crisp. Remove from the pan and set aside. Add the oil, swirl to coat the pan and throw in the spinach. Saute until wilted, 30 seconds. Remove and set aside. Add the egg, sprinkle with salt and pepper and fry to your preferred doneness. Flip and finish cooking. I like mine a little runny. I'm dangerous in life.
  3. Serve as a little sandwich! BAM.
