Melon In Sweet Coconut Milk (Or What To Do If Your Melon Is Tasteless)
- 1 can (400ml) Coconut Milk
- 1 stick Cinnamon
- 6-3/8 ounces, weight Palm Sugar
- 1 pinch Sea Salt
- 1/2 cups Water
- 1 whole Melon
- Warm up the coconut milk in a pan with the stick of cinnamon, palm sugar, and a pinch of sea salt. Add a little bit of water (about half a cup). Keep the heat low.
- Once the palm sugar has dissolved, have a taste. Add more palm sugar if it is not sweet enough for your liking. Take the pan off the heat and set the pan in a sink of cold water in order to rapidly cool it down.
- Peel and cut up your melon into nice chunky cubes. Place them in dessert bowls or big cups.
- Once the sweetened coconut has cooled down add it to your bowls of cut up melon with some ice-cubes.
- A very refreshing dessert for those warm summer evenings.
