Sweets’ Strawberry Bread
- 3 cups Flour
- 2 Tablespoons Cinnamon
- 1 teaspoon Baking Soda
- 1-1/4 cup Chopped Pecans (optional)
- 1/2 teaspoons Salt
- 1 cup Canola Oil
- 4 whole Eggs, Beaten
- 2 cups Sugar
- 24 ounces, weight Frozen, Sliced Strawberries (thawed)
- 1. Preheat oven to 350 degrees F.
- 2. Grease two 5X9 bread pans. I usually do one bread pan and a 12-count muffin pan, so that I have a little of both.
- 3. In a large bowl, mix dry ingredients together (flour through salt on the above list).
- 4. In a separate bowl combine oil, eggs, sugar, and strawberries.
- 5. Add strawberry mixture to the dry ingredients and stir together until combined.
- 6. Pour into greased pans. Bake bread for about 1 hour. (I bake the muffins for about 20 minutes).
