Creamed Spinach Sauce
- 2 Tablespoons Butter
- 1/4 cups Minced Onion
- 2 Tablespoons Flour
- 1/2 cups Half-and-half
- 1/2 cups Chicken Broth
- Salt And Pepper
- 1 pinch Ground Cayenne Pepper
- 1 pinch Ground Nutmeg
- 4 cups Chopped Fresh Spinach
- 1 Tablespoon Grated Parmesan
- Lemon Juice (optional)
- Melt butter in a medium saucepan over medium heat. Add onion and cook until translucent. Stir the flour into the butter and onions and cook for 1 minute. Whisk in the half-and-half, chicken broth, salt, cayenne, and nutmeg. Bring sauce to a simmer, reduce heat and continue to simmer for about 2 minutes, or until sauce begins to thicken.
- Add in the spinach, stirring until wilted. Mix in the Parmesan and add a squeeze of lemon juice (optional). Add more half-and-half if sauce thickens too much. Season with salt and pepper to taste. Serve immediately.
- This recipe pairs best with a grilled Swiss cheese stuffed burger.
