Gloria'S Pineapple Cake
- 3 sticks butter
- 3 c. sugar
- 6 eggs
- 3 c. flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. lemon extract
- 1/4 c. milk
- 3/4 c. crushed pineapple
- Sift together flour, baking powder and salt; set aside.
- In another bowl, add butter and sugar together; blend well.
- Add eggs, one at a time.
- Blend well.
- Alternately blend milk and flour mixture into butter, sugar and egg mixture.
- Add lemon extract.
- Beat well.
- Fold in pineapple before pouring batter into a well-greased and floured tube pan.
- Place in cold oven.
- Set temperature to 350u0b0 and bake 1 hour to 1 hour and 15 minutes. While cake is baking, mix together 2 tablespoons butter, 1/2 cup brown sugar and crushed pineapple.
- Pour on cake.
- Place on plate and serve warm.
