White Chocolate Macadamia Nut Bread

  1. Preheat oven at 350u0b0F. Grease two 9"x5" loaf pans.
  2. Using an electric mixer on low, stir together shortening, sugar, eggs and vanilla extract until blended. Sift flour, baking powder, baking soda, and salt. Gradually add in flour mixture to shortening mixture alternating with milk until all combined and blended. Stir in macadamia nuts and white chocolate chips.
  3. Pour equal amounts into each loaf pan.
  4. Bake in the preheated oven for 55-60 minutes until a tester comes out clean. Cool on a wire rack. Run a butter knife around the sides of the loaf pan and turn the loaf upside down to remove.
  5. Place white chocolate chips and shortening in a microwave safe bowl. On 50% power, heat for 1 minute. Remove and stir, and continue to heat until melted. Drizzle on top of loaves and let chocolate harden before serving.
