(Mostly) Healthy Zucchini Banana Oat Bread
- 1-1/2 cup Whole Wheat Flour
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Baking Powder
- 1 teaspoon Salt
- 1 teaspoon Cinnamon
- 1 cup Oats
- 1 cup Sugar
- 2 Eggs
- 2 teaspoons Vanilla Extract
- 1/2 cups Melted Butter Or Coconut Oil
- 1 Medium Sized Zucchini, Finely Shredded
- 3 Medium Sized Bananas, Mashed Up
- 1 cup Your Favorite Nuts (optional)
- Preheat oven to 350u0b0F.
- In a medium-sized bowl, combine all the dry ingredients (flour, baking soda, baking powder, salt, cinnamon and oats) and set aside.
- Using a stand mixer or hand mixer, combine sugar, eggs and vanilla. Slowly add the melted butter so you don't cook the eggs (if using oil, you can mix it all at once). Mix until all combined. Mixture should look like thin caramel.
- Slowly add dry ingredients. Mix until well combined. It will look like a thin cookie dough batter; don't panic, it's supposed to look this way. Using a spatula, fold in zucchini, banana and nuts until fully incorporated.
- Pour mixture into greased loaf pans or muffin tins and bake for 45-60 minutes or until inserted toothpick comes out clean.
- Note: If you would like to cut down on sugar, you can replace the sugar with an equal amount of no-sugar-added applesauce.
