Citrus Spinach-Arugula-Kale Cold Salad
- 1/2 cups Baby Spinach, Chopped
- 1/2 cups Baby Arugula, Chopped
- 1/2 cups Baby Kale, Chopped
- 1 whole Ruby Red Grapefruit
- 1 whole Navel Orange
- 1/2 whole Red Onion, Sliced
- 1/4 cups Almond Slivers (optional)
- FOR THE DRESSING:
- 1/2 whole Lemon, Juiced
- 1/2 whole Lime, Juiced
- 3 Tablespoons Canola Oil
- 1 Tablespoon White Vinegar
- Salt And Black Pepper To Taste
- Add baby spinach, arugula, amd kale into a large mixing bowl.
- Peel and separate the citrus fruit in sections. Add to mixing bowl. Add sliced red onions, salt and black pepper. Toss very gently. Add almonds, if desired.
- In a smaller bowl, add dressing ingredients. Stir or mix well. Drizzle over salad. Gently toss and serve.
