Cold Sesame Noodle Salad
- FOR THE DRESSING:
- 1 Tablespoon Sambal Oelek
- 2 Tablespoons Rice Vinegar
- 1 Tablespoon Soy Sauce
- 1 teaspoon Sesame Oil
- 1 teaspoon Fish Sauce
- 2 Tablespoons Olive Oil
- 2 teaspoons Sugar
- FOR THE SALAD:
- 4 cups Cooked Pasta, Any Kind You Like
- 2 cups Shredded Savoy Cabbage
- 1/2 whole Small Cucumber, Cut Into Matchsticks
- 1 whole Small Carrot, Cut Into Matchsticks
- 3 whole Scallions, Sliced
- 1/4 cups Cilantro Leaves
- 1/2 cups Sprouted Peas Or Lentils
- Combine dressing ingredients with a whisk and taste; adjust the seasoning to your preference.
- Toss the dressing with the salad ingredients for 2-3 minutes for the pasta to start to absorb the dressing. Serve immediately or store in the fridge for up to 3 days.
