Microwave Vanilla Cream Pie
- 3/4 c. sugar
- 1/4 c. cornstarch
- 1/4 tsp. salt
- 2 1/2 c. milk
- 4 egg yolks
- 1 Tbsp. butter
- 1 1/2 tsp. vanilla
- 1 (9-inch) baked pie shell
- whipped cream or meringue
- In a 2-quart casserole, mix together sugar, cornstarch and salt.
- Gradually add milk, mixing well.
- Cook with microwave on High 4 to 6 minutes or until thick, stirring every minute.
- Beat egg yolks slightly.
- Gradually add some of the hot mixture to egg yolks, stirring constantly.
- Add combine egg mixture to hot mixture and mix well.
- Cook with microwave on High 1 1/2 to 2 1/2 minutes until thick, stirring every 30 seconds.
- Add butter and vanilla.
- Mix well.
- Pour hot filling into baked pie shell.
- Cool. Top with whipped cream or meringue.
- Makes 6 to 8 servings.
