Hominy Casserole
- 5 slices Thick Cut Bacon
- 1/2 cups Onion, Diced
- 2 whole Jalapeno Peppers, Seeded And Diced
- 2 cloves Garlic, Minced
- 2 cans (15 Oz. Size) Yellow Hominy, Drained
- 4 ounces, fluid Jar Pimento, Drained
- 2 cups Shredded Cheddar Cheese, Divided
- Salt And Pepper, to taste
- Preheat oven to 350u0b0F and spray a 9 x 9 casserole dish with cooking spray. In a large skillet (I use a chicken fryer), cook chopped bacon until almost crisp. Add onion and jalapeno peppers and saute for two to three minutes or until just soft. Add garlic and saute for another minute. Drain off excess grease, then add the hominy and the pimento. Saute for an additional minute and add 1 1/2 cups of the cheese. Salt and pepper to taste. Stir until cheese is just melted and transfer to the casserole dish. Top with remaining cheese and bake for 20 minutes, or until cheese is bubbly.
