Mom’S Sketti Sauce
- 1 Tablespoon Olive Oil
- 1/2 whole Onion, Chopped
- 2 cloves Garlic, Minced Or Chopped
- 28 ounces, weight Canned Tomato Sauce
- 14-1/2 ounces, weight Canned Italian Style Diced Tomatoes
- 8 ounces, weight Canned Tomato Paste, Between Half And All Of The Can
- Italian Seasonings To Taste
- 1 dash Cayenne Pepper (Optional)
- 1 pinch White Sugar, A Very Generous Pinch
- Salt And Black Pepper To Taste
- 8 ounces, weight Sliced White Mushrooms
- Fresh Snipped Parsley For Garnish
- In a large sauce pan, saute the onions and garlic in olive oil over medium heat until tender and fragrant. This will take about 2-3 minutes.
- Then pour in the tomato sauce, diced tomatoes and paste. Rinse cans with a little water and add it to the pan. Stir to combine. Season with seasonings of choice, black and cayenne peppers, sugar and salt. Taste and adjust if needed.
- Let it simmer. The longer the better. This sauce can be ready to serve as soon as it's heated through, however if I have the time, I like to let it simmer on low for a couple of hours, stirring occasionally.
- Just a few minutes before serving, add in mushrooms and some parsley. Stir, let cook a few minutes until 'shrooms are tender. Garnish with more parsley and serve over hot pasta.
