Brenda'S Stuffed Chicken With Crab
- 2 Tbsp. butter or oleo
- 1/4 c. flour
- 3/4 c. milk
- 3/4 c. chicken broth
- 1/3 c. cooking wine
- 1/3 c. chopped green onions
- 1 Tbsp. butter
- 6 oz. crabmeat
- 6 large fresh mushrooms, chopped
- 1/2 c. cracker crumbs
- 1 Tbsp. fresh parsley
- 1/4 tsp. salt
- 8 chicken breasts, boned
- 4 oz. shredded Swiss cheese
- 1 tsp. paprika
- hot cooked rice
- Melt 2 tablespoons butter and flour; stir 1 minute.
- Slowly add milk, broth and wine.
- Cook, stirring, until thickened.
- Set aside. Saute onions in 1 tablespoon butter.
- Add crab, mushrooms, parsley, salt and pepper.
- Stir in 2 tablespoons of sauce.
