Lasagna
- 3 Tbsp. olive oil
- 1 clove garlic, pressed or minced
- 1 lb. ground beef
- 1 lb. ground pork
- 1 (No. 2) can Italian tomatoes (about 2 1/2 c.)
- 3 (6 oz.) cans tomato paste
- 2 c. water
- 2 1/2 tsp. pepper
- 1 tsp. oregano
- 4 qt. water
- 2 Tbsp. salt
- 1 Tbsp. olive oil
- 1 lb. lasagna noodles
- 2 lb. Ricotta cheese or 1 large carton of cottage cheese
- 1 lb. shredded Mozzarella cheese
- 1 lb. yellow cheese (American or Colby)
- 1 c. Parmesan cheese
- 2 Tbsp. parsley
- Heat 3 tablespoons olive oil in a large deep skillet.
- Add onion and garlic.
- Cook until onion is transparent.
- Stir occasionally.
- Add ground beef and ground pork broken into small pieces.
- Cook until lightly brown.
- Stir in tomatoes, tomato paste, water, salt, pepper and oregano.
- Cook, uncovered, over low heat about 1 1/2 hours, stirring occasionally.
