Microwaved Beef Stew
- 3/4 lb. beef boneless bottom round steak, cut into 1/2-inch cubes
- 3 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 c. hot water
- 1 medium carrot, thinly sliced
- 1 stalk celery, thinly sliced
- 1 medium potato, peeled and cut into 1/2-inch cubes
- 1 small onion, cut into eighths
- 1/2 c. frozen cut green beans
- 1 Tbsp. fresh parsley
- 1/2 tsp. Bouquet sauce
- In a 3-quart casserole, toss meat with cornstarch, salt and pepper until coated.
- Stir in remaining ingredients.
- Cover. Microwave on High 5 minutes.
- Stir; reduce power to 50% (Medium) and microwave 30 to 45 minutes or until meat and vegetables are tender, stirring 3 or 4 times during cooking.
- Remove cover during last 5 minutes of cooking time.
- Let stand, covered, for 10 minutes.
- Serves 2.
