Microwaved Beef Stew

  1. In a 3-quart casserole, toss meat with cornstarch, salt and pepper until coated.
  2. Stir in remaining ingredients.
  3. Cover. Microwave on High 5 minutes.
  4. Stir; reduce power to 50% (Medium) and microwave 30 to 45 minutes or until meat and vegetables are tender, stirring 3 or 4 times during cooking.
  5. Remove cover during last 5 minutes of cooking time.
  6. Let stand, covered, for 10 minutes.
  7. Serves 2.
