Mint Chia Pudding

  1. In a small food processor (mine is 3 cups) blend ingredients for the brownie bottom until smooth and creamy, scraping down the sides of the food processor as needed. Divide between bowls and spread evenly.
  2. In a medium bowl, whisk together ingredients for chia pudding. Divide between the bowls. Cover and refrigerate overnight.
  3. In the morning, swirl together the layers and devour!
