Gin Fizz With Celery Lime Foam
- 2 ounces, fluid Gin (Brockman's)
- 1 ounce, fluid Lemon Juice
- 3/4 ounces, fluid Simple Syrup
- 3 ounces, fluid Soda Water
- 2 Inches Celery Lime Foam
- FOR THE CELERY LIME FOAM:
- 4 ounces, fluid Water
- 4 Egg Whites
- 2 ounces, fluid Lime Juice
- 1-1/2 ounce, fluid Rich Demerara Sugar Syrup
- 4 dashes Celery Bitters
- Add gin, lemon juice and simple syrup to a cocktail shaker. Add ice and shake. Strain into a Collins glass without ice.
- Top with soda water, leaving an inch of space near the top. Top again with celery foam from prepared ISI canister.
- For the celery lime foam:
- Add all ingredients into an ISI whipping canister. Close it up and add a nitrous charge. Charge and shake. When used up, add another nitrous charge and charge and shake again.
