Double Divinity

  1. Mix sugar, hot water and salt in heavy pan. Cook over high heat stirring constantly until mixture comes to a rolling boil. If sugar crystals form on side of pan, wipe off with a
  2. damp cloth. Turn heat down and cook without stirring until temperature reaches firm ball stage (248 degrees). Slowly pour 1/2 cup of syrup over egg whites, beating constantly with mixer at medium speed. Continue cooking rest of syrup to soft crack stage (272 degrees). Pour hot syrup slowly over egg white mixture, beating constantly. Continue beating until mixture begins to lose its gloss and a small amount dropped from a spoon holds soft peaks. Add pecans all at one and stir. Pour on sprayed pan.
