Easy 5-Bean Salad
- FOR THE SALAD:
- 1 can (15 Oz. Size) Kidney Beans, Rinsed And Drained
- 1 cup Fresh Or Frozen (and Thawed) Shelled Edamame
- 1 cup Fresh Green Beans, Stems Removed And Cut Into 1 Inch Pieces
- 1 can (15 Oz. Size) Garbanzo Beans (Chickpeas), Rinsed And Drained
- 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
- 1 cup Diced Celery, White Parts Removed
- 1/2 cups Diced Red Onion
- 2 Tablespoons Chopped Fresh Parsley
- FOR THE DRESSING:
- 1/4 cups Fresh Lemon Juice
- 2 Tablespoons Agave Syrup
- 1/4 cups White Wine Vinegar
- 1 teaspoon Extra Virgin Olive Oil
- 1/4 teaspoons Ground Sea Salt
- 1/4 teaspoons Freshly Ground Black Pepper
- In a large bowl, combine all beans, celery, red onion, and parsley. Stir.
- In a small bowl, combine dressing ingredients. Stir with a whisk, then add to the bean mixture. Stir well to combine.
