Mornin' Muffins
- 1 egg
- 1/2 c. brown sugar
- 1 c. rolled oats
- 3/4 c. plain nonfat yogurt, mixed with 1/4 c. milk
- 1 c. whole wheat flour
- 2 Tbsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1 1/2 c. vegetable oil
- 1/2 c. raisins
- 1/2 c. shredded coconut
- Preheat oven to 400u0b0.
- Beat egg in mixing bowl.
- Stir in brown sugar, oats and yogurt-milk mixture.
- Let stand while combining the flour, salt, soda, baking powder and cinnamon in a separate container.
- Add dry ingredients and oil to oat mixture, stirring with a spoon just enough to moisten ingredients.
- Do not overbeat. Stir in raisins and coconut.
- Spoon batter into paper-lined cups, filling generously and bake for 17 minutes or until toothpick stuck into the center of one comes out clean.
- Makes 12 muffins.
