Mornin' Muffins

  1. Preheat oven to 400u0b0.
  2. Beat egg in mixing bowl.
  3. Stir in brown sugar, oats and yogurt-milk mixture.
  4. Let stand while combining the flour, salt, soda, baking powder and cinnamon in a separate container.
  5. Add dry ingredients and oil to oat mixture, stirring with a spoon just enough to moisten ingredients.
  6. Do not overbeat. Stir in raisins and coconut.
  7. Spoon batter into paper-lined cups, filling generously and bake for 17 minutes or until toothpick stuck into the center of one comes out clean.
  8. Makes 12 muffins.
