Cornish Game Hens With Cranberry Orange Sauce

  1. With a damp cloth, wipe Cornish hens inside and out.
  2. Rub the cavity with salt and pepper.
  3. Saute onion and apples in 1/2 cup melted butter until tender.
  4. Stir in stuffing, cranberries and pecans.
  5. Stuff hens loosely.
  6. Close openings with skewers or needle and thread.
  7. Bake in a moderate oven for 45 minutes, basting occasionally with additional butter and drippings.
