Mediterranean Chicken Salad Pitas
- 1 cup Sour Cream Or Greek Yogurt
- 2 Tablespoons Lemon Juice
- 1 teaspoon Salt
- 1/2 teaspoons Fresh Ground Pepper
- 1 teaspoon Garlic Powder
- 1/2 teaspoons Crushed Red Pepper
- 1/2 teaspoons Ground Cumin
- 3 cups Chopped, Cooked Chicken Breast
- 1 whole Red Pepper , Stem And Seeds Removed, Then Chopped
- 30 whole Pimento-Stuffed Green Olives, Chopped
- 1/2 cups Diced Red Onion
- 1/2 cups Fresh Cilantro Leaves
- 15 ounces, weight Can Of Garbanzo Beans, Rinsed And Drained
- 3/4 cups Feta Cheese Crumbles
- 12 whole Wheat Pita Pockets
- 12 Lettuce Leaves & Tomato Slices
- Combine sour cream, lemon juice and seasonings in a small bowl and set aside.
- In a large bowl combine chicken, red bell pepper, olives, red onion, cilantro, garbanzo beans and feta cheese.
- Add sour cream mixture into the chicken mixture and stir well. Taste and season per your liking with additional salt and pepper.
- Line each pita pocket with lettuce and a slice of tomato, stuff with chicken salad and serve immediately.
