Mediterranean Chickpea Salad
- 1 can (15 Oz. Size) Chickpeas, Also Called Garbanzo Beans
- 4 Tablespoons Olive Oil
- 1 Tablespoon Red Wine Vinegar
- 1 teaspoon Fresh Lemon Juice
- 1 clove Garlic, Finely Chopped
- 1/2 teaspoons Dried Oregano
- Salt And Pepper, to taste
- 1 cup English Cucumber, Chopped
- 1 cup Cherry Tomatoes, Chopped In Half
- 1/4 Red Onion, Finely Chopped
- 1/4 Red Bell Pepper, Diced
- 4 Tablespoons Feta Cheese Crumbles
- 1 teaspoon Fresh Dill
- Rinse chickpeas in a small colander and let drain for a few minutes while you prepare the next steps.
- Mix olive oil, red wine vinegar, lemon juice, garlic, oregano and salt and pepper together to prepare vinaigrette. Set aside.
- Add cucumber, tomatoes, red onion, red bell pepper and feta to a large salad bowl. Add in drained chickpeas. Pour vinaigrette on the top of the salad and gently stir in until well coated. Finish with fresh dill.
