Marinated Baked Beets With Toasted Walnuts And Blue Cheese
- 4 whole Purple Beets
- 2 teaspoons Balsamic Vinegar
- 1 teaspoon Olive Oil
- Salt And Pepper, to taste
- 1/3 cups Toasted Walnuts
- 3 ounces, weight Blue Cheese
- Preheat oven to 350 F. Trim tops and bottoms off of the beets and wash throughly. Wrap each beet in tin foil and place on a baking sheet. Add enough water to just cover the bottom of the baking sheet. Bake for 40 minutes. Then remove the baking sheet from the oven and let beets cool to the touch. Then, peel and dice them into bite sized pieces.
- Place beets in a bowl and drizzle with balsamic vinegar and oil. Season with salt and pepper and let the mixture marinate in the fridge for 4 to 5 hours.
- Once beets are done marinating, mix in toasted walnuts and blue cheese (you can use goat cheese or feta instead and you can also use more or less depending on what you like). At this point, the beets can be eaten right away or saved for later. Enjoy!
