My Husband’S Favorite Jello Salad
- FOR THE JELLO:
- 2 packages Lemon Jello (3 Ounce Boxes)
- 2 cups Boiling Water
- 2 cups 7-up Or Other Lemon-lime Soda
- 2 whole Bananas, Sliced
- 1 can 20 Oz Can Crushed Pineapple (drained And Save Liquid For Topping)
- 1 cup Mini Marshmallows

- FOR THE TOPPING:
- 1 cup Sugar
- 2 Tablespoons Flour
- 1 whole Egg, Beaten
- 2 Tablespoons Butter
- 1 container Cool Whip (8 Ounce Tub)
- 1/4 cups Cheddar Cheese, Shredded
- Dissolve Jello in the boiling water. Once dissolved, stir in 7-up and chill until it is barely set in a 9x13 inch pan. Then, mix in the drained pineapple (reserve the juice for later), bananas, and marshmallows. Chill until completely firm. Make the topping and spread on the top of set jello mixture.
- To make topping: Combine sugar and flour in a saucepan. Stir in egg, butter and the reserved pineapple juice. Cook over low heat stirring constantly until very thick. Remove from heat and chill. When it is chilled, fold in Cool Whip. Spread over Jello mixture. Sprinkle with cheese and serve.
