Chocolate Mint Snow Top Cookies
- 1-1/2 cup Flour
- 1-1/2 teaspoon Baking Powder
- 1/4 teaspoons Salt
- 1-1/2 cup Semi-Sweet Chocolate Chips ( I Like To Use 1/2 Dark And 1/2 Semi-sweet)
- 6 Tablespoons Butter Or Margarine, Softened
- 1 cup Sugar
- 1-1/2 teaspoon Vanilla Flavoring
- 1/4 teaspoons Mint Flavoring
- 2 whole Eggs
- 1/2 cups Icing Sugar
- 1. Combine flour, baking powder and salt in a bowl. Mix and set aside.
- 2. In a sauce pan melt 1 cup of the chocolate chips over low heat stiring constantly. Remove from heat once melted. Set aside.
- 3. Beat butter with a mixer on medium speed for 30 seconds. Add in sugar and cream them together. Add melted chocolate and mix together well.
- 4. Add vanilla, mint and eggs and stir until well combined.
- 5. Slowly add flour mixture and remaining chocolate chips into the creamed mixture. Stir until it is all mixed together.
- 6. Wrap in wax paper or chill in the bowl for about 3 hours of until firm enough to roll into balls.
- 7. Roll into balls and roll in icing sugar. Place on parchment paper-lined cookie trays and press down slightly.
- 8. Bake in a 350 degree F oven for 10 or 12 minutes. Cool 2 minutes on the cookie sheet then transfer to a wire rack and cool completely.
- Makes about 42 cookies. I ALWAYS double this recipe!
