Banana-Nut Cake

  1. Heat oven to 350u0b0.
  2. Grease and flour one 13 x 9 1/2 x 2-inch pan or two 9 x 1 1/2-inch layer pans.
  3. Blend flour, sugar, baking powder, soda and salt in a large mixing bowl.
  4. Add shortening, half of buttermilk and mashed bananas.
  5. Beat 2 minutes on medium speed of mixer.
  6. Scrape sides and bottom of bowl constantly.
  7. Add eggs and rest of buttermilk.
  8. Beat 2 more minutes, scraping bowl frequently.
  9. Fold in nuts.
  10. Pour into prepared pans.
  11. Bake oblong 45 to 50 minutes and layers about 35 minutes.
