Banana-Nut Cake
- 2 1/2 c. cake flour (2 c. plus 3 Tbsp. if using regular flour)
- 1 1/2 c. sugar
- 1 1/4 tsp. baking powder
- 1 1/4 tsp. soda
- 1 tsp. salt
- 2/3 c. soft shortening
- 2/3 c. buttermilk
- 1 1/4 c. mashed ripe bananas (about 3)
- 3 eggs (1/2 to 2/3 c.)
- 1/2 c. finely chopped nuts (I use English walnuts)
- Heat oven to 350u0b0.
- Grease and flour one 13 x 9 1/2 x 2-inch pan or two 9 x 1 1/2-inch layer pans.
- Blend flour, sugar, baking powder, soda and salt in a large mixing bowl.
- Add shortening, half of buttermilk and mashed bananas.
- Beat 2 minutes on medium speed of mixer.
- Scrape sides and bottom of bowl constantly.
- Add eggs and rest of buttermilk.
- Beat 2 more minutes, scraping bowl frequently.
- Fold in nuts.
- Pour into prepared pans.
- Bake oblong 45 to 50 minutes and layers about 35 minutes.
