Maple Walnut Sandwich Cookies
- FOR THE COOKIES:
- 3 sticks Butter, Softened
- 1-1/2 cup Sugar
- 1/4 cups Molasses
- 1/4 cups Maple Syrup
- 4 whole Eggs
- 1-1/2 cup Walnuts
- 6 cups Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Salt
- 1 Tablespoon Maple Flavoring
- FOR THE FILLING:
- 1 stick Butter, Softened
- 1/4 cups Shortening
- 1 Tablespoon Milk
- 1 Tablespoon Maple Flavoring
- 4 cups Confectioners Sugar
- For the cookies:
- In a stand mixer, cream together butter, sugar, molasses and maple syrup until light and fluffy. Add one egg at a time and mix just until incorporated.
- Place walnuts in a food processor and pulse until finely ground. Pour walnuts into a large mixing bowl and add flour, baking powder and salt. Stir to combine.
- By the heaping spoonful, add the dry ingredients to the wet. Mix just until combined. Add maple flavoring and mix over medium speed for 2 minutes.
- Refrigerate the dough for at least 1 hour. Roll the dough out 1/4" thick and cut into your desired shape.
- Bake in a 350u0b0F oven for 10 minutes. Cool cookies on cooling rack.
- For the sandwich filling:
- Mix all ingredients for sandwich filling until light and fluffy. Spread on one cookie and top with another.
