Roasted Grapefruit With Agave Balsamic Reduction
- 1/4 cups Balsamic Vinegar
- 1 Tablespoon Agave
- 1 whole Grapefruit
- 1/3 cups MuscovadoSugar (or Dark Brown Sugar)
- 1 Tablespoon Plain Greek Yoghurt
- 1 pinch Cinnamon
- Bring the vinegar and agave to a boil. Reduce heat and simmer until the mixture is reduced by half (approximately 10 minutes). Allow to cool (it'll thicken as it cools).
- Slice the grapefruit in half and loosen all the segments with a knife. Wipe each half with a paper towel to remove excess moisture.
- Heat the sugar in a skillet until hot and slightly melted. Do not let it burn. Remove from the heat. Press the grapefruit into the hot sugar for about 30 seconds.
- Plate the grapefruit and drizzle with the balsamic reduction. Top with yoghurt and sprinkle with cinnamon.
