Roasted Grapefruit With Agave Balsamic Reduction

  1. Bring the vinegar and agave to a boil. Reduce heat and simmer until the mixture is reduced by half (approximately 10 minutes). Allow to cool (it'll thicken as it cools).
  2. Slice the grapefruit in half and loosen all the segments with a knife. Wipe each half with a paper towel to remove excess moisture.
  3. Heat the sugar in a skillet until hot and slightly melted. Do not let it burn. Remove from the heat. Press the grapefruit into the hot sugar for about 30 seconds.
  4. Plate the grapefruit and drizzle with the balsamic reduction. Top with yoghurt and sprinkle with cinnamon.
