Cheese And Jalapeno Cornbread Muffins
- 1 cup White Or Yellow Corn Meal
- 1 cup All-purpose Flour
- 1/4 cups Granulated Sugar
- 1 Tablespoon Baking Powder
- 1 teaspoon Salt
- 1 cup Milk
- 1/3 cups Vegetable Oil
- 1 Egg (large)
- 1-1/4 cup Medium Cheddar Cheese, Grated, And Divided
- 1 Jalapeno, Seeded, And Chopped Finely
- Preheat oven to 350u0b0F. Grease a regular size muffin pan.
- In a medium bowl, combine all dry ingredients. Mix together, and set aside. In a small bowl combine the milk, oil, and egg. Whisk together. Add wet mixture in with the cornmeal mixture. Stir together until incorporated. Gently fold in 1 cup of grated cheese and chopped jalapeno. Spoon into prepared muffin pan until each is about 2/3 full. Sprinkle each muffin with a little of the remaining 1/4 cup of cheese. Bake for about 15 minutes, or until a toothpick inserted in middle comes out clean. Enjoy!
