Grilled Peach Salad
- 1 whole Peach, Halved And Pit Removed
- 2 Tablespoons Extra-virgin Olive Oil, Divided
- 1/2 teaspoons Coarse Salt
- 1/2 teaspoons Freshly Ground Pepper
- 2 Tablespoons Crumbled Gorgonzola Cheese
- 2 cups Arugula
- 1/4 cups Walnut Pieces, Toasted
- 1 Tablespoon Honey
- 2 sticks Chives, Cut Into 1/2-inch Pieces
- Heat your outdoor grill or grill pan over medium-high. Rub a little oil over the grates.
- In a small bowl, toss the peach halves with 1 Tablespoon of oil, and a pinch of salt and pepper.
- Place each peach cut-side down on the grill. Cover with a lid and grill 3 minutes. Flip and spoon a Tablespoon of cheese into each pit hole (sounds gross?) and cover the grill for 3 more minutes of grilling.
- Toss the remaining oil with the arugula and place on your serving plate. Top with grilled peaches, the toasted walnuts, a good drizzle of honey and the chives.
