Spiced Pork Posole
- 2-1/2 teaspoons Olive Oil
- 1 cup Diced Onion
- 4 Tablespoons Chopped Fresh Cilantro, Divided
- 1-1/2 Tablespoon Minced Garlic
- 1 pound Lean Boneless Pork Loin, Diced
- 1 can (15 1/4 Oz. Size) Hominy, Drained (You Can Also Use Canned Corn)
- 1 cup Diced Green Poblano Pepper
- 1 cup Diced Tomatillos (You Can Use Red Tomatoes)
- 1 Tablespoon Cumin Seed
- 1 Tablespoon Chili Powder
- 5-1/2 cups Chicken Stock
- 1/2 Tablespoons Ground Coriander (optional)
- 1/2 Tablespoons Oregano
- 1 pinch Salt And Black Pepper (or To Taste)
- 1 whole Avocado, For Garnish (optional)
- 1 whole Lime, Cut Into Wedges, For Garnish (optional)
- 1 whole Radish, Sliced, For Garnish (optional)
- Heat oil in a large pan over medium-high heat. Saute onion, 1 tablespoon cilantro, and garlic in pan until onion softens, about 3 minutes.
- Add pork. Cook, stirring, until meat is browned on the outside, about 10 minutes.
- Add hominy, poblanos, tomatillos, cumin, chili powder, broth, coriander, and oregano. Cover and simmer until pork is tender and white, about 45 minutes. Season to taste with salt and black pepper.
- Garnish with avocado, lime wedges, and sliced radishes (if desired) and serve.
